They apparently over-stimulate zones of babies brains that aren't supposed to develop that young and cause problems later on. Anyone else heard this ? Is it true ? And what about baby sign language; will it delay speech development ?

Studies have shown that yes, babies who watch Baby Einstein say fewer words on average than babies who didn’t watch it. However, the effects were not permanent. I try not to use the TV as an educational tool. The TV is not an educational tool. And, the TV obviously doesn’t replace a parent’s ability to teach. I do understand putting a baby/child in front of the TV. I do it sometimes as well – my son will watch my programing (I watch discovery health usually during the day when the TV is on) when I need to cook dinner etc.. However, it shouldn’t be expected to make you child smarter, read better etc. Face to face contact and human interaction are essential for that.
