I would start teaching simple signs whenever you talk to him. Also, here are some REALLY good videos for when he gets a little older:

My niece has downs syndrome and so we sign to her. The signs I would start with are eat, drink, NO, bath, potty & all done. Those seem to be the signs we use the most, lol.
ETA: I work in Special Ed and there is a HUGE need for sign language interpreters.
