ASL (American sign language) is a whole language unto itself, but has many similarities to English for practical reasons. When teaching sign to young children it is fine using signed English (signing every word in the order you would use if you were speaking), but it is not necessary to sign every one, just the most important. As for sign names for Mary and Joseph, look up online for biblical signs in ASL they may already have official sign names (I'm not particularly religious). Because the song is repetitive you should only need a handful of signs:-)
